I’ve come across a few resources I want to share. Before continuing though, a brief follow up on (my continuing love affair with) our electric car. As detailed in prior posts, we leased a plug-in hybrid a couple months ago. We got it just before Christmas and still have half a tank of gas. That’s right: even though it’s our primary vehicle and we drive it daily, we have yet to fill up at the pump. As one of the stingiest men alive, I’m genuinely conflicted about whether I’m more excited about the reduced emissions or that my wallet is fatter.
Ok, on to business. While our family has started to enjoy our vegetarian diet, and even have a few staples, we have yet to find a source of super easy, very quick recipes for the times we have no plan (our go-to used to be burgers or pork tenderloin). Thanks to a friend and coworker, we were introduced to these recipes, which are yummy and not labor-intensive. Enjoy!
Moving from food to policy nerdfest, I discovered this energy podcast, which often focuses on renewables and climate change. In particular, I recommend the episodes on the Green New Deal and energy policy with Dave Roberts. (Roberts may be one of the few sane, balanced, and compelling voices on climate change.)
Finally, just to tease the full profundity of my next blog topic, my wife heard that Americans use four times as much toilet paper as other industrialized nations, and I want to get to the bottom of it (savor that pun as long as you like).
